The Holy Grail of American Barbecue - our Grain Fed Australian Beef Brisket is generously rubbed in salt & pepper, traditionally wood smoked on beechwood then finished off sous vide. A transcendent combination that delivers consistently tender and juicy brisket with real wood smoke flavour and a great bark. As moist and tender as the very best stuff you'll find in Austin or Lockhart. Available whole chilled or frozen sliced at 2mm and 6mm.


Reheating Instructions

UNOX Combi-Oven

  1. Open pouch and retain jus for gravy.

  2. Probe piece to the centre of the roast.

  3. Heat on 100% steam at 160°C until product reaches core temp of 75°C.

Conventional Oven

  1. Lay roast on an oven tray, adding all jus from pouch.

  2. Heat covered at 160°C for approximately 40 minutes, or until 75°C core temp is reached.

  3. Optionally remove cover for final 5-10 minutes of cooking for further caramelisation.
